B Smith’s Replacing Head Chef in Sag Harbor

Sag Harbor‘s waterside restaurant B Smith’s is looking to add an experienced and creative new chef to their team, according to ads posted on Craig’s List and culintro.com on Saturday. The restaurant’s management confirmed they are replacing their current executive chef John Poon and some kitchen staff, and the menu will definitely see some changes this summer, though nothing specific has been announced yet.

The ad states, “We are looking for hands on, energetic individual who is dedicated to providing an exceptional guest experience.” It notes that a successful candidate must have three years supervisory experience, Suffolk County food service manager certification, the ability to accuratly cost out menu items and work within budget, advanced knowledge of fresh seafood and American cuisine, and a culinary degree is preferred.

Matthew Guiffrida Marries Sheila Mullahy in Sag Harbor

Muse in the Harbor chef/owner Matthew Guiffrida married Sheila Mullahy in Sag Harbor’s historic Old Whalers’ Church on Sunday. Guiffrida has said he’ll likely add more rum drinks to the Muse menu, following the couple’s honeymoon in Jamaica. Congratulations!

Jessica Seinfeld Publishing New Cookbook

East Hampton’s Jessica Seinfeld will release a new cookbook this fall. The Can’t Cook Book: Recipes for the Absolutely Terrified will offer beginner chefs more than 100 easy, delicious recipes, including lemon salmon, pasta with clams and roast chicken.

Due for publication through Atria Books in September, The Can’t Cook Book is Seinfeld‘s third cookbook.

Sweet ‘tauk Shop Opening in Montauk

Sweet ‘tauk, a new lemonade start-up is joining Brooklyn’s Red Hook Lobster Pound to open a new lobster roll and refreshments shop in Montauk on May 8. Located at 34 South Etna Avenue, the Sweet ‘tauk eatery  and shop will serve lunch and dinner, and offer some outdoor “picnic-style” seating.

Along with the seafood and burgers, Sweet ‘tauk will sell a variety of house-made ice pops and small-batch ice creams.

Sweet ‘tauk is 100% natural, squeezed and mixed fresh using organic, seasonal & local ingredients lightly sweetened with raw agave nectar. The company is using whatever’s in season and local to flavor its exciting blends. “We use only peak-of-season fruits from local farmers mixed with our own imagination to create the most delightfully refreshing flavors,” their website explains, noting they use no refined sugars.

Nick & Toni’s Hires New GM Carolyn Papetti

On Wednesday, April 24, East Hampton eatery Nick & Toni’s announced the addition of new General Manager Carolyn Papetti, will oversee all aspects of the restaurant’s operations. Papetti will replace GM Bonnie Munshin.

Munshin, who has been an integral part of Nick & Toni’s success and culture for the past 21 years, will continue to work in the restaurant every Friday and Saturday greeting and taking care of guests with her usual grace and style.

A two-year-long search finally led the Nick & Toni’s team to Papetti whose professional experience, common business goals and understanding of the seasonal community made her a very good fit for the iconic restaurant. Papetti earned her M.B.A. in international marketing from St. John’s University’s Rome, Italy campus. Most recently, Papetti spent six years as the GM & Wine Director for Cittanuova restaurant in East Hampton. Having lived in Italy for 7 ½ years, Papetti is fluent in Italian and very knowledgeable of the wine and food of Italy. “…her presence will elevate the experience guests have come to know and expect from Nick & Toni’s Restaurant,” the announcement explains.

“I am thrilled to welcome Carolyn to the Nick & Toni’s family and I look forward to working with her and greeting all the Nick & Toni’s customers this summer” Munshin said.

Gabby Karan De Felice to Open Third Tutto in Tribeca

The rumors are confirmed! Tutto Il Giorno, the fave Italian eatery of such as Sarah Jessica Parker, Calvin Klein and Kim Cattrall will soon add a third new eatery to its roster with the opening of a restaurant in Tribeca.

“We will try to transport our Hamptons feel to New York,” says chef and partner Maurizio Marfoglia, who took over with Gabby Karan De FeliceDonna Karan’s daughter—after original founder Conde Nast honcho Steve Florio died in 2007.

The original Tutto Il Giorno opened in Sag Harbor in 2007 with Scott Conant in the kitchen. When Florio died, the restaurant restructured, bringing on Marfoglia and Karan De Felice. Conveniently, Tutto Sag Harbor is located just next door to Donna Karan’s Urban Zen Boutique. A Southampton restaurant on Nugent Street followed in 2011.

Marfoglia, a Lombardy native has garnered lots of accolades for his menu, which is seafood-heavy and features a list of homemade pastas, while the restaurant’s dining rooms has become a special haunt of the Hollywood and fashion crowds.

The chef is off to Naples in search of a new chef for Tribeca.

Sienna Restaurant & Ultralounge Comes to Hamptons

A new European-inspired dining and entertainment experience, Sienna Restaurant & UltraLounge, is opening in East Hampton this summer. The project is headed by Jonathan Rapillo, who is implementing this new concept at the 44 Three Mile Harbor Road venue that housed Beaumarchais East Hampton last summer, which he also owned and operated.

Sienna Restaurant & UltraLounge will feature Tony Fortuna‘s TBar Steak and Lounge concept, as Sienna Restaurant by TBar, as well as a nightlife program courtesy of Pink Elephant.

Fortuna returns to the Hamptons after a year hiatus from TBar at Savanna’s. He brings along Executive Chef Ben Zwicker of prestigious New York kitchens, including the Four Seasons, Aureole, Petrossian and, most recently, TBar Steak & Lounge. Guests can expect TBar‘s familiar eclectic American menu, which will be served five nights per week, Wednesday-Sunday, as well as weekend brunch service.

At Sienna, David Sarner and Robert Montwaid will bring Pink Elephant back to the Hamptons and programming will include a lineup of world-class DJs every Saturday. As each evening progresses, TBar will fade away as Sienna seamlessly transforms into a high-energy ultralounge. Dining tables will replaced by cocktail tables and the lighting will change to fit a nightlife vibe as the DJ booth goes live and continues late into the night.

Rapillo, whose Hamptons projects also included Rocco’s a la Playa, has gathered a team of consummate food & beverage professionals to execute his most comprehensive concept to date. He is also the president of Tufo Foods, a family-owned foodservice distributor.

Expect signature drinks, such as the Sienna Margarita, bottle service and satisfying meals with tasty entrees and substantial desserts. Entrees range from $26-$48.

Four Picks for Twentysomethings

Now that the weather is warming up, the Hamptons are buzzing once again. There are countless fun places to choose from and it’s hard to pick which ones are worthwhile, especially for twenty-somethings who are watching their wallets. There are quite a few restaurants, as well wineries that definitely deserve a visit.

The first place on my list that is delicious, and also really fun, is LT Burger in Sag Harbor; you feel like a little kid again when you go there. Their burgers and shakes are out of this world! The signature LT Burger with bacon is a must-have. The mixture of meat they use gives the burger a great beefy flavor that isn’t too fatty, yet is succulent. The perfect accompaniment to this burger are LT’s shoestring French fries; and when I say shoestring, I mean perfect, thin strands of fried potato. The jerk chicken sliders are also delicious. The chicken is smoked with allspice and Scotch bonnet peppers.

If you have never tried deep-fried pickles, then you must try them at LT. These Horman pickles are dipped in beer batter, deep fried to crunchy perfection and served with a homemade buttermilk ranch dipping sauce that is fantastically tangy. Last, but certainly not least, are their indulgent milkshakes. The toasted marshmallow with vanilla ice cream tastes like a S’more without the chocolate and the Oreo shake with chocolate ice cream is thick and super chocolaty.

The second restaurant, or pub in this case, that is highly recommended is Southampton Publick House in Southampton. The Publick House is a great place to sample their own craft beer, and also have some great bar food. Each of their homemade brews on tap and each one has its own distinct flavor. My favorites are the Double White and the Burton Indian Pale Ale because they’re light and go with a lot of the food they serve. If you want to try more than one of their beers, they offer a sampler with little tastes of multiple beers. The Publick House has the traditional bar food like Buffalo wings, Irish nachos and cheese quesadillas, but they also offer more fancy fare. On their dinner menu, besides all the bar munchies, is local duck, osso bucco, and seared salmon.

For the third restaurant I had to enlist the help of a friend, who happens to be a local of the Hamptons. I asked what are his favorite spots, and he raved about La Capannina in Wainscott, which, apparently, has the best pizza in the Hamptons. (Thanks, Jordan!) I mean, who doesn’t love pizza? And who doesn’t love an awesome Italian meal? I don’t know anyone like that, so this is a great place to go. They offer the common Italian cuisine, such as fettuccine alfredo and chicken Parmesan, but obviously if they have the best pizza, you have to get a slice or five. I was told that the Original and the Buffalo Chicken are perfect for late night, drunken munchies.

The fourth must-go place isn’t a restaurant, but a winery, probably the best winery in my opinion. Wölffer in Sagaponack is the best place to have “A Taste of the Hamptons,” which usually consists of a sparkling chardonnay, a rosé, a merlot and their dessert wine, Dirosa. Wölffer is best known for their rosé, which they call “summer in a bottle;” it’s so popular, in fact, that people usually buy it by the case. The rosé has a beautiful peach color and a floral, semi-sweet flavor. A few summers back Wölffer started a wine club for the young or “young at heart.” The Hidden Cellar Society will help the millennial crowd of vinoscenti learn more about wine and show that wine isn’t just an old-people-thing. They also have Twilight Thursdays with live jazz music and Sunset Fridays where people can come to relax after a long workweek. Not only is Wölffer a great place to learn about wine, and sample it, but it’s also a beautiful, Tuscan-inspired winery.

So, this summer when you’re in the Hamptons and looking for a great time, good food, wine and beer, these are just four awesome places to go.
