Noah’s Pulls into Dan’s Taste of Two Forks
Food trucks are all the rage on the East End! Just ask Justin Schwartz, owner/operator of noah’s on the road, the mobile arm of Greenport’s noah’s. Their hip, vintage Airstream will be parked in Bridgehampton on Saturday, July 18 for the fifth annual Dan’s Taste of Two Forks fête. Schwartz dishes on summer food and what it means to be local.
What are you most looking forward to about being part of Dan’s Taste of Summer this year?
Having the food truck there

Hoisin pulled pork taco with mom’s homemade cucumber kimchi paired with Greenport Brewery Otherwise IPA.

What drew you to work on the East End?
Family, food and the abundance of local ingredients from the farms.

Seafood.
If you had two forks in your hands right now, what would you like to stick them in?
Anything that my sister in-law Sunita has cooked.

Clambake on the beach.
What is your favorite local ingredient?
Peconic Bay scallops and Pipes Cove Oysters.
What is your favorite aspect of being part of the culinary culture on the East End?
The teamwork and camaraderie amongst the chefs and restaurants.
When you hear the phrase “local,” what comes to mind?
Walking across the street to the farm stands for veggies and throwing a line in the water to catch fish for dinner.
Where do you find inspiration?
Traveling.

Lobster rolls, oysters and Greenport Harbor Ale.
